In sumo, Komusubi is one of the three titled ranks below champion. Inspired by that idea, this dish features three key ingredients from Fukuoka - sea bream, oysters, and persimmons - fried to perfection. Each ingredient offers its own distinct texture and flavor, and when enjoyed together, they create a complex yet harmonious taste experience. The dish is brought together by a warm waridashi-an sauce made from sea bream and bonito, lightly scented with yuzu to evoke the feeling of late autumn in Japan. (Fun fact: Waridashi is also the name of a sumo winning technique!)
