In sumo wrestling, Komusubi is one of the three titled ranks below champion. Inspired by that idea, this dish features three key ingredients from Fukuoka—sea bream, oysters, and persimmons—fried to perfection. Each ingredient offers its own unique texture and flavor, and when enjoyed together, they create a complex yet harmonious taste experience. Everything is tied together by a warm waridashi-an sauce made from sea bream and bonito, lightly scented with yuzu to evoke the feeling of late autumn in Japan. (Fun fact: “Waridashi” is also the name of a sumo winning technique!)
