After leaving his corporate job, Mr. Matsunaga gained hands-on cooking experience at street food stalls and deepened his knowledge of seafood while working at a fish shop. In 2005, he opened Matsunaga Suisan, where guests can enjoy a wide variety of dishes featuring fresh seafood from the waters around Kyushu.

Many visitors already know that Fukuoka’s squid is exceptional - and that includes guests from overseas. At Matsunaga Suisan, each order is freshly prepared: the squid is taken directly from the tank and swiftly sliced to serve as ikizukuri (live sashimi). Its translucent flesh, springy texture, and natural sweetness with every bite are the marks of true freshness. “Both the popularity and the flavor of Fukuoka’s squid are yokozuna-class!” says Mr. Matsunaga with a smile. Once you taste it, you’ll be completely won over by the flavor of Fukuoka’s locally caught squid. Additional preparation: 300 JPY.
The restaurant’s signature dishes feature seafood from Fukuoka and across Kyushu. Inside the restaurant, live squid, conger eel, and other seafood - sourced directly from trusted suppliers - swim in tanks, ensuring top freshness. The menu also offers a wide selection of non-seafood dishes.
