【Owner Chef: Mr. Masayuki Muroya】

After training in the culinary capitals of Paris and Lyon, Mr. Muroya returned to Japan and served as head chef at Kojima-tei (now French Cuisine KOJIMA). In 2013, he opened Hakata Yōshoku Muroya, and following its relocation in 2018, renewed it as Yōshoku Bistro Muroya. He hails from Iizuka City.

Chef Mr. Muroya created this original dish specifically for the fair. Standing proudly on a sumo ring made of sea bream mousse are two pieces of sea bream meunière. Once the paprika “mawashi” is tied, it’s time for the match. Vivid vegetables, acting as the audience, watch the duel with anticipation. This is the only place where you can enjoy the sumo-themed concept combined with the finesse of French techniques. After enjoying the unique visual, swirl some Japanese-style sauce and dig in!
