【Head Chef: Mr. Takuya Ishimatsu】

Raised in a family that ran a blowfish kaiseki restaurant, Mr. Ishimatsu developed a passion for cooking from an early age. At fifteen, he began training at a traditional kaiseki restaurant and later refined his skills at renowned ryokans in Ishikawa Prefecture. He continues to pursue new flavors with creativity and dedication.

Hiyajiru, a traditional dish from Miyazaki, is a humble meal of chilled miso soup with grilled, flaked blue fish and seasonings served over rice. Chef Ishimatsu has transformed this rustic comfort food into an elegant and refined creation. Served atop freshly cooked rice prepared in individual clay pots are two kinds of sea bream - one grilled, and another homemade “ham,” cured with herbs and kombu (kelp). Both are lightly smoked for an enticing aroma, and the delicate flavor of flying fish (ago) broth enhances every bite. This is a dish to be savored slowly, not simply poured over rice and eaten in haste.

Washo Hakata Shogetsu (Japanese Cuisine)

In spring 2024, the restaurant was renamed Washo Hakata Shogetsu. In addition to exceptionally fresh seafood, it offers carefully crafted dishes made with select ingredients sourced from across Japan.
