This special donburi features Fukuoka sea bream, which is especially delicious in autumn - the season of the Kyushu Sumo Tournament. The sea bream is lightly battered and fried, served with a Japanese-style rolled omelet, and finished with a savory sauce made with plenty of seasonal mushrooms such as maitake and shimeji. The dashi-based sauce, made from bonito, has a slightly rich flavor that pairs perfectly with the crispy-skinned sea bream. In Western cultures, mushrooms are considered a symbol of good luck - so perhaps this bowl will bring success your way!
