His interest in cooking began when a high school friend’s family ran a Japanese restaurant. After training at sister restaurants Yamao and Issho, he now leads the kitchen as head chef, guiding and mentoring the next generation of cooks.

Few people know that Fukuoka’s Hakata Bay and Buzen Sea yield delicious blue crabs. Male crabs are in season through November—right around the time of the Kyushu Sumo Tournament—when their flavor is at its richest. This special fair dish features deep-fried Fukuoka blue crab simmered in a mild chili sauce blended with dashi made from kelp and bonito. Although chili-based, the soup isn’t spicy, so even those who don’t like heat—or children—can enjoy it. With the crab standing tall in the bubbling pot, it almost looks like a sumo champion in the ring!
