After graduating high school, Chef Tobimatsu honed his culinary skills at sister restaurant Issho and at a yakitori restaurant in Tokyo. Returning to Fukuoka, he now devotes himself to creating dishes that respect the fundamentals of Japanese cuisine while highlighting seasonal ingredients.

The Genkai Sea, off the coast of Fukuoka, is known year-round for its exceptionally fresh seafood—but it reaches its peak from late autumn to winter. During this season, Fukuoka’s prized red sea bream—nicknamed Momiji-dai (“autumn-leaf sea bream”)—is at its best, and Itoshima’s Spanish mackerel grows rich and fatty. Other winter delicacies such as grouper (ara) and mackerel also shine at this time of year. This special fair-only dish, the “Magnificent Eight! Yokozuna Nagahama Sashimi Platter,” features eight kinds of the finest seasonal seafood from the Genkai Sea, arranged in a sumo-ring style presentation worthy of a grand champion (yokozuna). Freshness, flavor, and abundance—truly a feast fit for a sumo wrestler!

Hakata Tobiuo – Local Fish & Sake of Genkai

An izakaya specializing in fresh seafood from Kyushu, especially the Fukuoka area. During the Kyushu Sumo Tournament season, the restaurant also offers a variety of dishes featuring ara (grouper), a local delicacy.
