Sea bream (madai) is an essential fish for celebratory occasions in Japan and is considered one of the country’s premium seafoods. At Umeboshi, however, it’s offered at an affordable price so everyone can enjoy its refined flavor. In autumn, Fukuoka sea bream becomes especially rich and flavorful. Here, it’s grilled and topped with a smooth butter sauce made from Fukuoka’s famous spicy cod roe (mentaiko). The dish combines the delicate, flaky texture of the fish with the pleasant pop of the mentaiko roe—finished with a topping of fresh, uncooked mentaiko for extra depth.
