Influenced by his father’s love of cooking, he developed an interest in the food and beverage industry. After graduating from a culinary school, he joined Hakata Uokura. He now serves as head chef, creating high-quality dishes that satisfy a wide range of guests.

Dishes arranged with alternating ingredients of different colors resemble the striped pattern of a Hakata obi sash, which is why they are called Hakata-zukuri. Created especially for this fair, this Hakata-style dish features red sea bream and house-made karasumi. The delicate flavor of the sea bream is paired with rare, lightly cured karasumi that retains its fresh character, resulting in a rich umami and a lingering, satisfying finish. Finished with a mellow Japanese-style dashi sauce, this ambitious creation offers a completely new way to enjoy sashimi.

Hakata Uokura

A Japanese restaurant renowned for its seafood landed in the waters off Fukuoka, including the branded fish Benihitomi (nodoguro). In addition to authentic Japanese cuisine, the restaurant also offers halal-friendly and vegetarian options.
