【Owner Chef: Masayuki Muroya】

He trained in the gourmet cities of Paris and Lyon. After returning to Japan, he served as head chef at Kojima-tei (now French Cuisine KOJIMA). In 2013, he opened Hakata Yoshoku Muroya. Following a relocation in 2018, the restaurant was renewed and rebranded as Yoshoku Bistro Muroya. He is originally from Iizuka City.

At this restaurant, winter yellowtail landed in Itoshima is prepared as a meunière and layered in three tiers with daikon radish, creating a dish called “Kagami Buri.” Inspired by kagami mochi, an essential symbol of the Japanese New Year, arugula is used to represent urajiro leaves, while carrot is shaped to resemble a mandarin orange—adding playful detail throughout the presentation. The vibrant green sauce is based on seasonal shungiku (chrysanthemum greens). Finished in a Japanese style with yellowtail bone broth, bonito, and butter, the dish offers waves of umami that gently circulate across the palate, bringing a smile with every bite. A special creation that showcases the chef’s refined sensibility and technique.
