Inspired by a love of Italian culture, Chef Nagamatsu entered the culinary world and honed his skills at renowned restaurants in Tokyo and Fukuoka. With the desire to make Italian cuisine more approachable, he opened CENTO in September 2020.

Yellowtail from Fukuoka reaches peak richness and flavor from December through January. The fish is cold-smoked in-house using a custom smoker, concentrating its flavor while adding a delicate smokiness. It is then topped with arugula on a Roman-style pizza known for its thin, crisp crust, finished in a fresh, salad-style presentation. The smoky aroma of the yellowtail and the subtle bitterness and fragrance of arugula create a complex and layered taste. A squeeze of the lemon served on the side reveals yet another dimension of flavor. A truly new take on pizza—well worth trying.
