Red sea bream, a fish that enhances the festive spirit of the New Year, has long been cherished in Japan as a symbol of celebration, adorning traditional celebratory meals. Nanohana, a quintessential spring vegetable, is rich in nutrients that help boost immunity. For this fair, these two ingredients come together in a clay pot rice dish. Charcoal-grilled sea bream is cooked with Fukuoka-grown rice in a broth made from sea bream bones and kombu seaweed, then topped with kombu-cured nanohana. The savory aroma of the grilled fish harmonizes beautifully with the gentle bitterness of the nanohana.
An izakaya renowned for its bold grilling of meat and fish over charcoal and straw. Equipped with live tanks, it also offers live sashimi such as spear squid and filefish. With the addition of a new annex scheduled to open in November 2025, its appeal is set to double.
