Yellowtail, known as a shusseuo—a fish whose name changes as it grows—is an essential part of New Year traditions in Fukuoka. For this fair, Yellowtail Shabu-Shabu makes a special appearance on the menu. Fresh, high-quality, richly marbled yellowtail is lightly swished through ago dashi (flying fish broth), also used in Hakata-style ozoni soup. Because the fish is of sashimi-grade quality, the ideal moment to enjoy it is when the surface is just cooked while the center remains rare. The remaining broth becomes deeply flavorful with the essence of yellowtail and vegetables—perfect for finishing the meal with rice porridge (available at an additional charge).
