Born in Miyazaki Prefecture, Mr. Nomura laughs, “Maybe I became a chef simply because I love fish.” He opened Shinsuke in 2001 and continues to personally visit the market each day to select the finest ingredients. “The greatest joy is seeing our guests smile after tasting our food,” he says — a passion clearly reflected in every dish he prepares.

“Spanish mackerel is at its best during the colder months, when it becomes rich and flavorful.” Long regarded as a symbol of good fortune, it has traditionally been used in celebratory dishes such as osechi. This dish features Spanish mackerel marinated in yuzu miso made with yuzu from Nishimera Village in Miyazaki Prefecture and miso from Tsurumiso Brewery in Yanagawa, then gently grilled to a tender finish. As you flake the plump, juicy flesh with its rich fatty umami, you’ll find that sake pairs perfectly and goes down smoothly. Be sure to enjoy every bite, including the delightfully crisp skin.
