As winter deepens and sea temperatures drop, yellowtail from Fukuoka becomes richer and more flavorful. To let guests fully appreciate its natural taste, this dish is served without the usual dipping sauces such as ponzu. Instead, the yellowtail is enjoyed directly in a delicately balanced broth made with bonito dashi and ponzu. The clean, refreshing flavor highlights the fish’s inherent umami. As the meal progresses, the essence of the yellowtail and vegetables gradually melts into the broth, creating a subtle evolution of flavor. Finish the meal with Gotō udon noodles or rice porridge to savor every last drop of its depth and richness.
