Spanish mackerel, considered a symbol of good fortune and often used in osechi cuisine, is prepared here in a unique way. Slices of sashimi are placed on straw laid at the bottom of a clay pot, then lightly seared on the surface. Once the straw is ignited and flames rise, the pot is covered, and the dish is ready in just a few minutes. During this season, the fish is especially moist and rich, enhanced by a delicate smoky aroma. Enjoy it with garlic-infused tamari soy sauce or simply with salt. “When paired with salt, the smoky flavor really stands out,” says store manager Mr. Iwamoto. A selection of sake and shochu chosen by Mr. Iwamoto further elevates the dish.
