Red sea bream is prized not only for its flavor but also for its beautiful reddish hue, making it a perfect fish for celebratory occasions such as the New Year. Long familiar to the Japanese, it adds elegance to festive tables of all kinds. Here, the sea bream is lightly seared and placed atop vinegared rice loosened with Japanese dashi, then finished with an aromatic oil infused with Yame tea—creating a dish found nowhere else. “I created it with the image of nanakusa-gayu (seven-herb rice porridge) in mind,” says Mr. Amano. The vinegared rice is made with Fukuoka-grown Yume-tsukushi rice, allowing diners to enjoy the blessings of both sea and mountains in a single dish.
Mr. Amano’s culinary repertoire is wide-ranging, offering an outstanding lineup from appetizers to main dishes and desserts. The menu also features nukadaki, a specialty of Kitakyushu. A carefully curated selection of beverages, including natural wines and Japanese craft gin, is also available.
