By keeping the seasoning simple—just salt and pepper—the natural sweetness of both the squid and vegetables is brought to the forefront. “Because it’s quickly cooked on the iron plate, the squid stays tender and pleasantly springy,” says Mr. Tamagawa, affectionately known as “Tama-chan,” a lively Hakata native. Using a whole squid, this dish is both hearty and deeply satisfying.
