After leaving his corporate career, Mr. Matsunaga gained hands-on cooking experience at yatai food stalls before deepening his knowledge of seafood while working at a fresh fish shop. In 2005, he opened Matsunaga Suisan. Today, the restaurant offers a wide variety of dishes centered on seafood from the waters around Kyushu.

At Matsunaga Suisan, each order is prepared by taking live squid directly from the tank and skillfully filleting it on the spot to serve as ikezukuri.
