As suggested by its kanji “鰆,” Spanish mackerel is a fish that heralds the arrival of spring. At Hakata Kaisen Masa, the sagoshi is marinated for a full day in a mildly sweet Kyushu-style blended miso, a recipe handed down from the famed restaurant Isogai, then carefully grilled until tender and aromatic. The first bite releases a gentle fragrance, followed by a balanced saltiness and a lingering, delicate sweetness. Garnished with seasonal rapeseed blossoms and served on an elegant Arita-yaki plate, this dish brings a refined, springlike elegance worthy of celebratory occasions such as the Hina Matsuri.
