A native of Fukuoka Prefecture, he pursued a career in Japanese cuisine, influenced by growing up in a family that ran a traditional ryokan. Drawing on the experience he gained at long-established Japanese restaurants, he continues to move forward with the vision of creating “Hakata-style teppanyaki” using locally sourced meat, seafood, and vegetables.

Market-direct sea bream from Fukuoka is filleted and lightly seared on the skin side. “The area between the skin and the flesh is where the fat is richest and most flavorful. By searing it, you can really bring out that umami,” says Mr. Katsuno, the store manager with deep expertise in seafood. Dressed with a sesame soy sauce made using Fukuoka-produced soy sauce, the dish delivers a clean, refreshing taste that highlights the natural sweetness of the sea bream. Although served as one course following the appetizer and salad, it holds its own presence alongside the main teppanyaki dish. Best enjoyed with a local sake recommended by Mr. Katsuno.

All seats are counter-style with personal teppan grills, with private rooms also available. Guests can enjoy teppanyaki dishes ranging from rare Kobe beef steaks to premium domestic beef and fresh seafood. A variety of teppanyaki course menus at reasonable prices are also offered.
