What if Hinamatsuri were celebrated through French cuisine? This beautifully composed dish reimagines a traditional Japanese festival through Western techniques, offering a vibrant expression worthy of celebrating girls’ growth and happiness. Presented against a backdrop of pastry shaped like a folding screen are a meunière of Itoshima sakuradai, styled to resemble hishi-mochi rice cakes, and a temari-style chicken pilaf. The soft pink sauce—made from shellfish fond blended with beets and fresh cream—delivers a refined depth of ocean flavor. Savor a springtime moment designed to delight all five senses.

Western Bistro Muroya

Chef-selected ingredients sourced directly from Itoshima take center stage here. From Western-style lunch offerings to authentic French course meals, the restaurant’s diverse menu is one of its greatest attractions.
