Inspired by a love for Italian cuisine, he entered the culinary world and honed his skills at renowned restaurants in Tokyo and Fukuoka. With the desire to make Italian food approachable and enjoyable for everyone, he opened CENTO in September 2020.

For this Hinamatsuri-themed fair, Cento presents a cartoccio-style pizza. Cartoccio refers to an Italian cooking method in which ingredients are wrapped and baked. Lightly sautéed red sea bream, shrimp, and fresh tomatoes are enclosed in pizza dough and baked, creating a cartoccio-inspired dish. The wrapping locks in moisture, keeping the seafood juicy, while garlic sauce and hints of lemon peel stimulate the appetite. Paired with a crust that’s crisp on the outside and delightfully chewy inside, it’s a pizza that pairs perfectly with a glass of wine.

PIZZERIA CENTO

An Italian restaurant specializing in Roman-style pizza baked in a stone oven near the entrance, along with pasta dishes. The main courses are equally authentic and popular, featuring items such as hearty meat dishes and acqua pazza made with locally caught fish.
