Using carefully selected ingredients sourced from across Japan—centered on seafood from Fukuoka—each dish is refined through traditional Japanese techniques into a truly exceptional creation. Bringing the meal to a perfect close is this clay pot rice. In season, richly flavorful and well-marbled red sea bream, known as sakura tai, is a celebratory fish fit for special occasions. Charcoal-grilled to a fragrant finish, the sea bream is placed atop rice cooked in a bonito and kombu dashi enriched with aromatic sea bream oil, then gently steamed to allow the flavors to meld. The result is a deeply aromatic, umami-rich dish that leaves a lasting sense of happiness.
