Inspired by his father’s love of cooking, Mr. Hayashi developed an early interest in the culinary arts. After graduating from a professional culinary school, he built his experience at Hakata Uokura. Now serving as head chef, he continues to delight guests with refined, high-quality cuisine.

Nigiri sushi is typically enjoyed with soy sauce, but for Hinamatsuri, Uokura offers a refreshing alternative. Each piece is carefully seasoned to bring out its natural character: Fukuoka-grown sea bream paired with grated chili radish and green onions, and lightly seared Spanish mackerel finished with citrus juice and salt. Soy sauce can of course be added to taste. Beautifully arranged on a long rectangular plate, this sushi selection adds festive elegance to the table, inviting everyone to share in both the flavors and the celebration.

Hakata Uokura
