March 3 marks Hinamatsuri, also known as the Peach Festival—a celebration traditionally dedicated to girls. One of the dishes most closely associated with this occasion is chirashi sushi. Colorful and visually beautiful, chirashi sushi is said to carry wishes for girls’ health and well-being. This vibrant version, featuring Fukuoka-grown sea bream and yellowtail, is as pleasing to the eye as it is to the palate. “We’ve kept the flavors gentle so that even young children can enjoy it,” says Mr. Fujita. The result is a dish that delights not only children, but adults as well.
