【Chef: Mr. Yuki Amano】

After working with several restaurant groups in Fukuoka, including new openings in Nishinakasu and Itoshima, Mr. Amano—originally from Kitakyushu—opened his own casual standing bar “Amano.” He serves dishes freely inspired by what he feels like creating each day, without being bound by a particular genre.

In sumo, Komusubi is one of the three titled ranks below champion. Inspired by that idea, this dish features three key ingredients from Fukuoka - sea bream, oysters, and persimmons - fried to perfection. Each ingredient offers its own distinct texture and flavor, and when enjoyed together, they create a complex yet harmonious taste experience. The dish is brought together by a warm waridashi-an sauce made from sea bream and bonito, lightly scented with yuzu to evoke the feeling of late autumn in Japan. (Fun fact: Waridashi is also the name of a sumo winning technique!)

Kakuuchi Delica Amano

Located near Yakuin Yotsukado, this standing-only bar offers a refined selection of sake, seasonal small plates, and even desserts. The quality and creativity of the dishes go far beyond what one might expect from a casual standing bar.
