Born in Fukuoka, Nakano chose a career as a chef with the goal of mastering a hands-on craft. “While I give everything at work, I’m usually a homebody on my days off,” he laughs— maintaining a clear balance between on and off, and welcoming guests with genuine hospitality.

Sawara is a fish that grows richer in flavor during the colder months, often featured in New Year dishes such as salt-grilled or Saikyo-style preparations. This dish was created to showcase its appeal in a different way. By lightly searing the surface of the sashimi, the umami concentrated between the skin and flesh is brought out even more. It is best enjoyed with raw aosa seaweed gently squeezed into soy sauce, which adds a smooth texture and a fragrant, oceanic aroma. According to Nakano, “A dry Japanese sake pairs beautifully with this dish.” The richness of the sawara, combined with the subtle sweetness and briny scent of aosa, creates a flavor you won’t find anywhere else.
