【Head Chef: Mr. Tsuyoshi Kamishina】

Mr. Kamishina refined his culinary skills at a ryokan in Yufuin and various restaurants in Fukuoka. He later served as head chef at the opening of the sister restaurant Hakata Mata, helping it grow into a popular destination. In addition to flavor, he places great importance on creating dishes that surprise and delight.

This chirashi sushi is generously topped with Fukuoka-grown seafood such as sea bream, amberjack, and Spanish mackerel. Inspired by the traditional hishi-mochi of Hinamatsuri—symbolizing wishes for girls’ health, longevity, and prosperity—the dish is as meaningful as it is beautiful. The sushi rice is colored with sakura denbu and aonori, balancing visual elegance with delicious flavor. It also features Mirai Salmon, a farmed salmon from Buzen City in Fukuoka that has been gaining attention, offering a taste of Fukuoka’s next generation of seafood.

Aburi Robata Yamao Tenjin

An izakaya known for boldly grilling meat and seafood over charcoal and straw. The restaurant is equipped with live tanks, allowing guests to enjoy live sashimi such as spear squid and filefish. In November 2025, an additional annex location was opened.
