After graduating from a culinary school, Chef Ohshima honed his skills at a hotel in Chiba. He later gained further experience at renowned French restaurants in Fukuoka before opening his own restaurant in 2017. His dedication to craftsmanship extends to making ingredients such as karasumi in-house.

Yellowtail is so essential to Fukuoka’s New Year traditions that it even appears in ozoni soup. Among its many classic preparations, buri daikon—yellowtail simmered with daikon radish—is one of the most beloved. For this fair, Bistro Ohshima presents its own interpretation of buri daikon—far from the traditional style. Slices of yellowtail sashimi are paired with two types of carefully prepared daikon radish and house-made karasumi, then finished with a Japanese-style sauce made from olive oil and soy sauce. The rich, fatty yellowtail and the clean, refreshing daikon create an exceptional balance of flavors.

Bistro Ohshima

A French bistro located on the first floor of a building along the Jonan Line. While casual in atmosphere, it is well known for dishes that incorporate Japanese elements. The restaurant actively uses ingredients sourced from Fukuoka and across Kyushu.
