After graduating from a culinary school, Chef Ohshima honed his skills at a hotel in Chiba. He later gained further experience at renowned French restaurants in Fukuoka before opening his own restaurant in 2017. His dedication to craftsmanship extends to making ingredients such as karasumi in-house.

“Fukuoka’s red sea bream becomes especially delicious around this time of year, so we finished the dish with a refreshing sauce that enhances its natural flavor,” says owner-chef Oshima. The Fukuoka-grown sea bream is carefully prepared and aged over time to draw out its full umami. It is then dressed with a sauce made from seasonal ingredients. The accompanying vegetables—such as sunny lettuce and arugula—are sourced from Itoshima and tossed in a dressing made with fresh new onions. The rich umami of the sea bream and the clean, refreshing finish make this a perfect dish for the season.
