【Owner: Koichi Tsukazaki】

After graduating from a vocational school, he joined a famous hotel in Fukuoka City. He trained under the highly respected figure in Fukuoka’s Chinese cuisine scene, Mr. Tomoaki Chiku. While inheriting Chiku’s flavors and philosophy, he offers Chinese cuisine with a Fukuoka touch.

“When you think of sumo, you think of chanko hot pot,” says Tsukazaki. This dish was originally served by his mentor, the previous owner Chiku, during the Kyushu Sumo Tournament season. Although the restaurant has now reached its 15th anniversary, some long-time customers request dishes that are no longer on the menu. So, this legendary dish has been revived. An ethnic sweet-and-spicy broth inspired by Malaysian satay sauce enhances the delicate flavor of the sea bream. It can also be made with fish scraps.
