After graduating from a culinary school, Mr. Tsukazaki began his career at a renowned hotel in Fukuoka City, where he trained under Mr. Tomoaki Chiku, a leading figure in Fukuoka’s Chinese cuisine scene. While inheriting his mentor’s flavors and philosophy, he continues to offer Chinese cuisine with a distinct Fukuoka touch.

“When you think of sumo, you think of chanko hot pot,” says Tsukazaki. This dish was originally created and served by his mentor, the late Mr. Chiku, during the Kyushu Sumo Tournament season. Although the restaurant is now celebrating its 15th anniversary, long-time customers sometimes request nostalgic dishes that are no longer on the menu. To honor those memories, this legendary dish has been revived. The sweet-and-spicy broth, inspired by Malaysian satay sauce, beautifully complements the delicate flavor of sea bream - which can also be substituted with fish head or bones upon request.

Chinese Restaurant Yuku Shanghai

Offering Chinese cuisine unique to Fukuoka, the restaurant actively uses local fish and other regional ingredients. While incorporating authentic Chinese styles, it continues to evolve and has gained a strong following among diners. In autumn, it also serves Shanghai crab, freshly shipped from China.
