A donburi using Fukuoka sea bream that is delicious even in autumn, during the Kyushu Sumo season. The sea bream is lightly battered and fried, accompanied by a Japanese-style rolled omelet. A Japanese-style mushroom sauce, using plenty of maitake and shimeji mushrooms, ties the dish together. The sauce, made from bonito broth, is slightly rich and pairs perfectly with the crispy-skinned fried sea bream. In the West, mushrooms symbolize good luck—could this bowl bring success to your career?
