Red sea bream and sekihan are staples on celebratory tables for occasions such as weddings in Japan. By bringing these two together, their appeal is doubled. Lightly salted and grilled Fukuoka-grown sea bream is placed atop sekihan wrapped with thinly sliced egg, then gently steamed and finished with a Japanese-style dashi broth. The combination of fluffy sea bream and pleasantly chewy rice creates an enjoyable contrast in texture. With its perfectly balanced seasoning, this dish can be enjoyed either as a sake accompaniment or as a satisfying final course.

Donburi Tavern Dondon

Although the name may suggest a donburi specialty shop, the restaurant also offers a wide selection of fresh sashimi, sake-friendly small dishes, and original creations inspired by Chef Koyama’s ideas. Of course, a variety of donburi bowls perfect for finishing a meal are also available. Lunch service is especially popular.
