Fukuoka-grown spear squid is known for its natural sweetness and deep umami, qualities that truly shine when grilled. This dish features whole spear squid stir-fried with generous amounts of vegetables such as cabbage, bean sprouts, and onions. Seasoned simply with salt and pepper, it brings out the inherent sweetness of both the squid and the vegetables. “By quickly cooking it on a hot iron plate, the squid stays wonderfully plump and springy,” says Kazuhiro Tamagawa. Prepared using an entire squid, this celebratory dish was created to mark Hinamatsuri and the arrival of spring.
