Unagi seiro-mushi is a local specialty of Yanagawa, made by topping rice mixed with a sweet sauce with fragrant grilled eel kabayaki, then gently steaming it in a wooden steamer. Unamaki was created as an easy and casual way to enjoy this traditional dish—wrapped in nori like a Japanese sushi roll, it has become a signature item unique to Fukusenso. The nori used is ichiban-tsumi, the first harvest of the season, prized for its quality and aroma. This rare and premium Fukuoka Ariake nori is a specialty of Yanagawa.
