“I wanted to create a dish that both locals and international guests could enjoy,” says Chef Takamatsu. This 10-piece Yokozuna Nigiri set features the best seasonal seafood sourced daily from local markets. Highlights include Fukuoka specialties such as sea bream, octopus, and mackerel—all at their peak flavor. Other selections, like lightly seared Spanish mackerel (sawara), are prepared with an extra touch of care.
