Matsunaga’s interest in cooking began when a high school friend’s family ran a Japanese restaurant. After training at sister restaurants Yamao and Issho, he now leads the kitchen as head chef, guiding and mentoring the next generation of chefs.

Few people know that Fukuoka’s Hakata Bay and Buzen Sea are home to delicious blue crabs. Male crabs are in season through November - right around the time of the Kyushu Sumo Tournament - when their flavor is at its richest. For this special fair, Chef Matsunaga created a dish featuring deep-fried blue crab simmered in a mild chili sauce blended with dashi made from kelp and bonito. Despite its chili base, the broth isn’t spicy, making it enjoyable even for children and those who prefer milder flavors. With the crab standing tall in the bubbling pot, it almost looks like a sumo champion ready for battle!

This upscale izakaya offers a refined selection of Kyushu’s seasonal delicacies, paired with an extensive lineup of sake.
