After graduating from high school, Chef Tobimatsu honed his culinary skills at sister restaurant Issho and a yakitori restaurant in Tokyo. Upon returning to Fukuoka, he has continued to pursue the essence of Japanese cuisine, creating dishes that emphasize both solid fundamentals and the beauty of seasonal ingredients.

The Genkai Sea, off the coast of Fukuoka, is known year-round for its exceptionally fresh seafood - but it reaches its peak from late autumn through winter. During this season, Fukuoka’s prized red sea bream—nicknamed Momiji-dai (“autumn-leaf sea bream”) - is at its finest, while Itoshima’s Spanish mackerel becomes richer in flavor. Other delicacies such as ara (grouper) and mackerel also come into season as the weather cools. For this special fair, Chef Tobimatsu has created the “Magnificent Eight! Yokozuna Nagahama Sashimi Platter”, featuring eight varieties of the freshest, most flavorful seafood from the Genkai Sea. Presented in a bold sumo-ring style, this luxurious platter - brimming with freshness and rich umami - is truly a feast fit for a sumo champion.
