It combines sea bream with seasonal Spanish mackerel - at its best during the Kyushu Sumo season - and adds a touch of Fukuoka’s famous motsu nabe essence. The broth, made from Hakata chicken and flying fish (ago), is enriched with local seafood, Wagyu beef offal, tsukune meatballs, and Fukuoka-grown vegetables. Despite its simple seasoning, the flavor is deeply satisfying and full-bodied.
