Chirashi sushi has long been a festive centerpiece of Hinamatsuri celebrations, and that tradition continues today. With the hope that each guest will feel a sense of joy and elegance, Mr. Koishi created this special dish. Fukuoka-grown red sea bream and Mirai salmon are cut into easy-to-enjoy pieces and scattered over locally produced Koshihikari sushi rice. Great care is taken not only in flavor but also in presentation, resulting in a visually stunning chirashi sushi. Enjoyed as the final dish of the meal, it promises complete satisfaction.

Itsuboshi Nishinakasu

Tucked away inside a building in Nishi-Nakasu, this refined Japanese restaurant offers a sophisticated dining experience. It serves obanzai—seasonal small dishes thoughtfully prepared with ingredients sourced from Fukuoka and other regions of Japan. A wide selection of local sake and shochu is also available.
