Ishii began his culinary career in Japanese cuisine before returning to his hometown of Karatsu, where he deepened his knowledge of fish at a renowned seafood shop. He became the manager of Jyuo Jyuushoku upon its opening, bringing his expertise and passion for sourcing the freshest local seafood.

At Jyuo Jyuushoku, freshness is everything—Chef Ishii personally visits the market and contacts local fishermen to ensure the best catch of the day. Since June, the restaurant has started offering breakfast service, allowing guests to enjoy exceptional seafood dishes from morning through evening. For this seasonal fair, Ishii created a luxurious morning-and-lunch-only menu that celebrates natural sea bream from Fukuoka. The meal features tai donabe gohan (sea bream rice cooked in a clay pot), sashimi, agedashi (fried tofu or fish in broth), and ara-jiru (fish soup)—a complete sea bream feast that can be enjoyed as is or transformed into ochazuke (tea broth over rice). It’s the perfect way to experience the depth and delicacy of Japan’s beloved sea bream.

Jūgyo Jussoku

Opened last year as a sister restaurant to the popular Itoshima Shokudo, known for its seafood rice bowls, Jyuo Jyuushoku offers a wide variety of fish dishes carefully selected for freshness and provenance. Its signature dish, the Jyuo Jyuushoku Sashimi Platter, expresses the beauty of Japan’s four seasons in a single plate.
