Alongside yellowtail, red sea bream is a classic fish that graces New Year’s tables in Fukuoka. Traditionally, a whole sea bream is purchased: the fillets are enjoyed as sashimi, while the head and remaining parts are simmered. At Matsunaga Suisan, the head is first parboiled and cleaned of scales, then gently simmered in a sweet-and-savory sauce made with soy sauce and sugar. Its rich flavor pairs beautifully not only with sake and shochu, but also with steamed rice. A subtle hint of chili pepper added as a hidden accent tightens the sweetness, creating a deeply satisfying dish.
