Fresh amadai (tilefish) delivered daily from Kanezaki Port in Munakata is known for its thick, tender flesh. Though fresh enough to be eaten raw, it’s prepared here using the Japanese matsukasa-yaki technique—slowly grilling the fish so that the skin becomes crisp and flaky while the inside stays moist and juicy. A rich cream sauce, made by combining white wine with a broth extracted from the fish’s bones, enhances the deep natural umami of the tilefish. Be sure to savor every drop with a piece of bread!
