【Owner: Mr. Tsuyoshi Matsuo 】

Born in Fukuoka, Chef Matsuo trained in Italian, French, and Japanese cuisine before opening Mazzone in 2016. “I want my restaurant to remain a place where people can eat, drink, and simply have fun - without pretension,” he says. With its cozy atmosphere, it’s a welcoming spot even for solo diners.

The fresh amadai (tilefish) delivered daily from Kanezaki Port in Munakata is prized for its thick, tender flesh. Though fresh enough to be enjoyed raw, here it’s prepared using the Japanese matsukasa-yaki technique - slowly grilled so the skin becomes delightfully crisp while the inside stays moist and succulent. A rich cream sauce made from the fish’s bones and white wine further enhances the deep, natural umami of the tilefish. Don’t let a drop go to waste - soak it up with bread! For the perfect pairing, enjoy it with a crisp dry white wine.
