In autumn, Fukuoka’s sea bream becomes plump and rich in flavor. For this special fair menu, thick cuts of sea bream are wrapped in fine kadaif (crispy shredded pastry) and fried to golden perfection. They’re then topped with truffle cream and Fukuoka’s signature spicy cod roe (mentaiko). The result is a beautifully balanced dish: the crunch of kadaif, the fluffy texture of the fish, and the mellow depth of the truffle and mentaiko sauces harmonize into an elegant, complex flavor that’s sure to impress even international guests.
