Born in Miyazaki Prefecture, Mr. Nomura laughs, “Maybe I became a chef simply because I love fish.” He opened Shinsuke in 2001 and continues to personally visit the market each day to select the finest ingredients. “The greatest joy is seeing our guests smile after tasting our food,” he says — a passion clearly reflected in every dish he prepares.

This refined dish features premium amadai (tilefish) marinated in a fragrant yuzu miso made with yuzu from Nishimera Village in Miyazaki and miso from the traditional Yanagawa brewery Tsurumiso Jozou. The fish is slowly grilled to perfection, releasing a delicate aroma and rich, refined flavor unique to tilefish. The crisp skin adds texture, while the side condiment- a blend of yuzu miso and grated daikon radish - is so delicious that it could be enjoyed on its own with sake. “The savory miso pairs perfectly with a pure junmai sake rich in rice aroma,” says Nomura.

With only 16 seats, Shinsuke offers a quiet, intimate setting where guests can enjoy dishes that bring out the natural flavors of seasonal seafood. If you’re visiting for the first time, try the signature Sashimi Platter (3,500 JPY per person), which even includes rare cuts of whale - a unique local delicacy.
