While sea bream (madai) is often considered a spring fish, in fact, it becomes rich and flavorful again in autumn—so much so that locals call it Momiji-dai (“autumn-leaf sea bream”). Fukuoka ranks among Japan’s top regions for sea bream catches, and during the Kyushu Sumo Tournament season, the fish reaches its peak taste. This dish features sea bream from the Genkai Sea, grilled and finished with a rich butter sauce accented by Fukuoka’s famous spicy cod roe (mentaiko). The mild flavor of the fish blends perfectly with the savory sauce—delicious both as a sake accompaniment or over a bowl of rice.
