While sea bream (madai) is typically known as a spring fish, it also becomes rich and flavorful in autumn - earning the nickname Momiji-dai (“autumn-leaf sea bream”) for its seasonally deep color. Fukuoka ranks among Japan’s top regions for sea bream catches, and during the Kyushu Sumo Tournament season, the fish reaches its peak flavor. This dish features sea bream from the Genkai Sea, grilled and finished with a rich butter sauce accented by Fukuoka’s famous spicy cod roe (mentaiko). The mild flavor of the fish blends beautifully with the savory sauce, making it perfect either as a sake pairing or enjoyed with a bowl of rice.
