This dish features winter red sea bream from Fukuoka, grilled to perfection and generously topped with a butter sauce infused with Fukuoka’s famous mentaiko (spicy cod roe). The light, delicate flavor of the fish is elevated by the savory depth of the mentaiko butter, adding an extra layer of umami.
