He grew up in a family running a blowfish kaiseki restaurant and developed an interest in cooking from a young age. At 15, he started working in a kaiseki restaurant and honed his skills at famous ryokans in Ishikawa Prefecture. He is always researching new flavors.

Miyazaki’s traditional dish, Hiyajiru, is a simple meal of chilled miso soup with grilled, flaked blue fish and seasonings poured over rice. Chef Ishimatsu has refined it into an elegant dish. Served atop carefully cooked individual clay pot rice are grilled sea bream and homemade ham made by curing sea bream with herbs and kombu. Both are lightly smoked for aroma, and the flavor of flying fish broth enhances the appetite. It’s meant to be savored slowly, not just poured over rice.

Washo Hakata Shogetsu (Japanese Cuisine)

In spring 2024, the restaurant was renamed Washo Shogetsu. In addition to exceptionally fresh seafood, it gathers delicious ingredients from all over Japan to create carefully crafted dishes.
